PROCESS
- ThemeatisenclosedinourSaltMossChamber(Cave)fora controlledperiodoftime- Thebeefnaturallycontinuestobreathewhilstinanaerobicandnaked form.Duringnormalrespirationmoistureisexudedfromthemeat- Thewallsarehygroscopicinnature,ionizationdrawsmoistureto them,yetallowsittopassthroughandleavethechillenvironment- Theproductis‘cocooned’andbroughtunderamorestablecontrol, quickerthananonsaltagedcomparable- TheWallhasahighpotassiumlevelthusthedryculturewithinthe chillismaintainedbythisselfmanagedwall.
