AbouttheE-learningprofessionalChefapprenticecourse
Thethree-yearApprenticeship-basedDiplomainProfessionalCookeryandCulinaryArtpresentedbyHTAissupportedandcertifiedbyCity&Guilds,oneofthemostrecognisedglobalaccreditorsandawardingbodiesforVocationalQualifications.
Theinitiativedeliversatotalof33modulesoverthreeyearsandcombinestheoryandpracticallearningandimportantlymakestutoringavailablesothatstudentscanearnwhiletheylearn.HTASchoolofCulinaryArtisresponsibleforthetheoreticalassessmentoftheprogrammecontent,aswellasguidingtheIn-houseChefFacilitatorinthegatheringofevidenceofcompetence.City&GuildswillofficiatethefinalexamsandawardQualificationsattheendofthethreeyearprogramme.
Entryrequirement
TheHTACurriculumispresentedinEnglishandassuchEnglishliteracyandbasicnumeracyskillsisanessentialrequirementforsuccessfulcompletionofthisprogramme.
TheDiplomaprogrammemaybecompletedwiththeutilisationoftheE-LearningPortalandisavailableforStudents’tojoinatanytimeduringtheyear.
Howthiscourseworks
EducationalProvider:HTASchoolofCulinaryArt
Establishedin1995,HTASchoolofCulinaryArtwasformedtoassistSouthAfrica’sfastestgrowingindustryHospitality,TravelandTourism,withtheskillinganddevelopmentofChefs.TodayHTA,througharangeoftraininginterventions,skillsandcertifiesapproximately800cooks,chefsandcaterersperannum.HTA’straininginterventionsincludethetrainingofpersonsbothemployedandthosewishingtoenterourindustry.
HTA’sstateofthearttrainingcentreissituatedinJohannesburgSouthAfricaanditsfacilitiesincludeanumberofmodernclassrooms,skillskitchens,administrationcentre,resourcerooms,boardroomsandstudentrecreationalareas.
HTAisaccreditedbyCity&GuildsInternational(CentreNumber:843244)andisaTrainingProvidermemberoftheSouthAfricanChefsAssociation.
AllprogrammesdesignedbyHTAwill,whereapplicable,bebuiltonoraroundboththeoutcomesandrangeitemsoftheSouthAfricanNationalQualificationFramework(NQF)unitstandards,asregisteredbytheQualityCouncilforTradesandOccupationsandCATHSSETA(Culture,Art,TourismHospitalityandSportsSectorEducationandTrainingAuthority).
HiltonIn-houseChefFacilitator
AsanominatedIn-houseChefFacilitator,theFacilitatorhasaveryimportantroletoplayinthedevelopmentoftheChefApprentices.TheChefFacilitatorwillbethefirstpointofcontactforthereceiptofcoursematerials,coachingandassistancewithanynumberofquestionstheymayhave.
InessencetheChefFacilitatoristheMentoroftheChefApprentice.
TheChefFacilitatoristheeyesandearsofHTA,thedesignatedQualityAssurersofthisprogramme.AstheHTATeamisnotabletomonitorandassisttheChefApprenticesinperson,itistheChefFacilitator’sresponsibilitytoactastheagentofHTA.Theirmainresponsibilityisthegatheringofevidenceofcompetence,theproofofabilitytoperformsetrequirementsasstipulatedinthecoursematerial.
Assuch,theChefFacilitatormustbeaqualifiedExecutiveorSousChefindailycontactwiththeApprentice.AsaqualifiedandexperiencedprofessionalChef,theFacilitatorwillbeabletoguideandexplaintherelevantmaterialtotheChefApprenticeandalsosignoffonalldocumentationwhereapplicable.TheChefFacilitatorwillbethepersondemonstratingandexplainingallpracticalcomponentsofthisprogramme.

3. Abilityandtimetotakeownershipofthisproject

TheApprenticeshipprogrammeisessentiallyakitchen-basedcontinuouslearningprogramme.ForthisreasontheChefFacilitatorisresponsiblefortheinstructionoftheChefApprenticeanddocumentingperformance.
EffectiveparticipationintheprogrammeisachievedwiththesupportoftheL&Ddepartment.Thismaybebyassistedmonitoringofscheduledeadlines,communicationwithHTAorassistancewithtrainingchallengestheChefFacilitatormayencounter.
THEE-LEARNINGPORTAL
Introduction
Bridgewater’sweb-basedLearningPortalorLearningManagementSystem(LMS)bringsHTAtotheChefApprentice.WithindividualLoginandPassworddetails,eachChefFacilitatorandChefApprenticegainaccesstotheHTAcurriculumcontentprovidedonthelearningportal.
ThelearningportalsendsautomatednotificationsofnewresourceoronlinetestsreleasesdirectlytothelistedChefFacilitator’se-mailaddress.
ItisHTA’spolicythattheChefFacilitatoristhedesignatedcontactforallusersfromahotelwithregardstoprogrammecommunication.AnycommunicationreceivedfromorsenttoApprenticesisalsocommunicatedthroughtheChefFacilitator.
User’sGuide
Onceloggedin,auserentersthehomepageoftheLearningPortalandwillseetheallocatedcourseorcoursesontheleftofthecomputerscreenunder“LearningPaths”.ChefFacilitatorshaveaccesstoallmaterialreleasedtotheChefApprentices,aswellasdocumentationonlyforFacilitatoruse.ThesewouldincludeanswersheetsandModulerequirementswhereapplicable.

EachModulehassetassessmentstobecompletedbytheChefApprenticesbeforeproceedingtothenextModule.EveryassessmentcontributestowardanaccumulatedmarkwhichformspartofthefinalAcademicAchievementReportorprogrammeresult.

• ChefApprenticeshaveasingleopportunitytomeetthe60%passrequirementofanygivenassessment.
• Failuretocompleteanassessmentinthegiventime-framewillresultintheallocationofa0%mark.
• ConcernsorchallengesfacedregardingthecompletionofassessmentshavetobecommunicatedtoHTAbytheChefFacilitatorbeforetheonlineassessmentdeactivationdate.
Exams
The11thModuleofeachacademicyearisdedicatedtoFinalTheoreticalExamsofallcomponentscovered.
• InordertoparticipateintheseExams,allmoduleassessmentsmustbecompletedbythefinalsubmissiondateadvisedbyHTA.ShouldaChefApprenticefailtocomply,he/shewillnotcompletetheexamsandwillhavetore-enrolfortheentireyear.
• Onesupplementaryexamopportunitypersubjectisoffered,shouldtheChefApprenticeachievebetween50and59%onthefinalreport.
TheE-LearningPortal
LearningPortalorLearningManagementSystem(LMS)bringsHTAtotheChefApprentice.WithindividualLoginandPassworddetails,eachChefFacilitatorandChefApprenticegainaccesstotheHTAcurriculumcontentprovidedonthelearningportal.
ThelearningportalsendsautomatednotificationsofnewresourceoronlinetestsreleasesdirectlytothelistedChefFacilitator’se-mailaddress.
ItisHTA’spolicythattheChefFacilitatoristhedesignatedcontactforallusersfromahotelwithregardstoprogrammecommunication.AnycommunicationreceivedfromorsenttoApprenticesisalsocommunicatedthroughtheChefFacilitator.

REGISTRATIONANDPROGRAMMEACTIVATION
Registration
• Annualregistrationopensonthe1stofMayuntilthe15thofJulyofthatparticularyear.Documentationissenttoparticipatinghotelsineachregion,orbyrequest.
• Registrationdocumentationhastobecompletedforallnew1stYearApprentices,aswellasApprenticesprogressingtothe2ndand3rdYearModules.
• Thehotelwillberequiredtoprovidestandardinformationregardingdesignatedcontacts,etc.
• Uponreceiptofthecompletedregistrationdocuments,allrequiredinformationiscapturedandforwardedtotheHTAAccountsdepartmentforinvoicing.
• TheHTAAccountsdepartmentissuesaninvoicetothehotelforpayment.
• UponconfirmationofreceiptofpaymentbytheHTAAccountsdepartment,programmeactivationisauthorised.
Programmeactivation
• Onceactivationisauthorised,thenominatedChefFacilitatorofahotelwillreceiveane-mailfromHTAcontainingtheloginandpassworddetailsofeachregisteredChefApprentice.
• TheLMSPortalalsoautomaticallysendsanotificatione-mailuponactivation.ThismailwillcontainalinktothePortal.
• EachhotelreceivesoneChefFacilitatorlogin.
• Programmecontentisactivatedonthe1stofAugust,theofficialstartoftheacademicyear.
