During the 18th century, London experienced a period known as the ‘gin craze’. Gin was cheap
and easy to produce and consumption was high. As a result, the government imposed a hefty
licensing fee on gin distillers, causing the industry to go underground.
Then, in 2009, gin distillery, Sipsmith, became the first copper pot distillery to open its doors
in London for almost 200 years. Almost immediately, we began to feel the effects of a gin
renaissance in the UK, and we wanted in. That’s why we now have a selection of over 70
varieties of gin behind our bar, championing rising local distillers and unique tipples. With a
series of delicious gin-based cocktails, and our gin masterclasses, there’s plenty to explore.

This fabulous gin is produced by Adnams Brewery, based in Southwold. Made for the most part
with classic botanicals, this gin is big on flavour, with the addition of hibiscus flower adding an
unexpected floral twist. This gin was voted the best in the world at the International
Wine and Spirits Competition in 2013.

This powerful and aromatic gin was developed to bring the American palate its first real taste
of gin, focusing on the intense flavours of juniper berries. It began when Seattle bartender,
Ryan Magarian, took a bespoke botanical blend to a distillery in Portland. Many believe this to
be the first brand partnership between a bartender and distiller in American history.

Juniper & lemon
This Dutch company are well known for their traditional-style genevers, but this gin has a
distinct English influence. Based on a London dry gin, this spirit is certainly not a carbon copy,
using only two botanicals – juniper and lemon. The result is a refreshing gin with intriguing hints
of spice and lavender, despite its simple make up.

An extraordinary, award-winning gin produced by Professor Cornelius Ampleforth using
traditional cold compounding methods. This gin is made in ultra-small batches and the length
of the infusing process is controlled entirely by regular sampling of the spirit. The brown paper,
wax and string packaging is reminiscent of a Victorian apothecary.

unusual gin, aged in casks that were previously used for Jean de Lillet wine. This addition

founder, James Burrough, would take his trainee apothecaries to help them identify the many

When creator Desmond Payne decided to create a unique and different gin, he started by
choosing some unusual botanicals, including tea. This addition was revolutionary, and resulted
in a sophisticated and refreshing gin that stands out among the Beefeater legacy. The tea leaves
themselves are steeped in the gin for at least 24 hours, hence the name.

Based on an old recipe from 1761, Bombay gin is unique because of its distillation process and
vapour infusion. Unlike many other gins, which boil their botanicals directly into the spirit, the
