Cake Decorating - Consult and Design, Develop and Delivery

Demonstration Outline

(1 day course - $275 including lunch and handouts)

27 & 28 June Toowoomba (8 max.) 25 September, Brisbane (10 max.)

Cake Decorating - Consult and Design, Develop and Deliver is designed in response to student requests for some specific skill and knowledge on how to work with the client to: create the a design that suits both their needs and that meets their brief and budget; and the most effective process to take when baking, decorating and delivering the wedding cake of choice. Cake Decorating - Consult and Design, Develop and Deliver includes an interview with a bride to develop an awareness of the type of questions to ask, how to draw out their ideas, how to best sketch up some design options, how to seal the deal and some of the potential issues that may arise from the consultation i.e. any cultural considerations and design imperatives that have to be considered at the initial interview and during the development process. This demonstration gives you some framework in which to operate to ensure that you do not over-commit and under-deliver. At the end of this course students will have developed a set of skills and knowledge in the following areas. Consultation • What questions to ask • Getting the design ideas down • Creating some design options • Meeting the bride’s brief and budget • How to present the final package • The invoice

Designing • Leave the client with something tangible – a sketch,

written quote, technique examples • Incorporate their values – make them feel special • Do you have the skills • The difference between technique options • Don’t over commit and under deliver

Developing • What is the lead time required • Making it happen • What comes first – flowers, colouring, baking,

boards • Prepare your plan of action

Delivering • Does the cake need to be transported in parts • What packaging and transporting items are required • What first aid kits may be required • Assembly on or off site • Assembly time required • Venue considerations: delivery time, table location,

accessories, portion guide, how/where to cut the cake
