The percentages are based on 100 percent of the grain content. All grain except millet is certified by Demeter. All other ingredients are Demeter certified, or from certified bio companies or from cotrolled organic farming, preferably regional produce. We bake with rock salt from Saxonia-Anhalt. Our breads contain between 0,31 g and 1,36 g of salt per 100 g of bread. We use only spring water from our own well. For our yeast doughs wie use Bio-Molasses yeast from Agrano. Roasted & grounded bread improves aroma, freshness and durability. The following sorts are used for roasted & grounded bread: Brodowiner, tri-grain bread, whole-grain bread, rye bread, sunflower bread. We may use malted barley flour in our sourdough breads and Ökostolz* (spelt flour*, acerola mash*) in our spelt breads according to the baking quality of the grains. Our Backferment contains honey. We use organic baking ingredients based on organic vegetable oil for our baking machines and baking tins.
