Apple & sultana muffinsIngredients

200g self raising flour 1tsp baking powder 1 tsp cinnamon 50g wholemeal flour 100g golden caster sugar 2 eggs 125ml semi skimmed milk(or milk substitute) 4tblsp sunflower oil 2 grated apples 100g of sultana

Method1. Heat oven to 180C/160C fan/gas 4. In a large bowl mix the self-raising flour, baking

powder, cinnamon, wholemeal flour and golden caster sugar.2. In another bowl, mix the eggs, semi-skimmed milk and sunflower oil. Pour the wet

ingredients into the dry and mix well, then stir in the grated apples and sultanas.3. Divide the mix between 12 muffin cases and bake for 25 mins. Cool on a wire rack,

then pack in a container for lunch.

Banana bread. something to make and eat together.

This is a lovely, moist loaf, which really doesn’t need to be buttered. It freezes extremely well. Any bananas left in the fruit bowl are ideal for this cake - the riper they are, the better.

Ingredients

100g (4oz) butter, softened

175g (6oz) caster sugar

2 eggs

2 ripe bananas, mashed

225g (8oz) self-raising flour

1 tsp baking powder

2 tbsp Milk or substitute milk.

Essential kit

You will need a 900g (2lb) loaf tin, 17 x 9 x 9cm (6½ x 3½ x 3½in) base measurement.

How to make

Lightly grease the loaf tin and line it with non-stick baking parchment. Pre-heat the oven to 180°C/350°F/Gas Mark 4. Measure all the ingredients into a mixing bowl and beat for about 2 minutes, until well blended; an electric mixer is best for this but of course you can also beat by hand with a wooden spoon.

Spoon the mixture into the prepared tin and level the surface. Bake for about 1 hour, until well risen and golden brown. A fine skewer inserted in the centre of the cake should come out clean.

Leave the cake to cool in the tin for a few minutes, then loosen with a small palette knife and turn the cake out. Remove the lining paper and leave on a wire rack to cool completely. Slice thickly to serve.

Scones

Ingredients

8oz Self raising flour 1oz caster sugar 2 oz butter or dairy free substitute. 5 fl oz Milk or dairy substitute, enough to may a pliable dough.

Method

1. Heat the oven to 220C/425F/Gas 7. Lightly grease a baking sheet.2. Mix together the flour and rub in the butter.3. Stir in the sugar and then the milk to get a soft dough.4. Turn on to a floured work surface and knead very lightly. Pat out to a round 2cm/¾in

thick. Use a 5cm/2in cutter to stamp out rounds and place on a baking sheet. Lightly knead together the rest of the dough and stamp out more scones to use it all up.

5. Brush the tops of the scones with the milk. Bake for 12-14 minutes until well risen and golden.

6. Cool on a wire rack and serve with your favourite topping.
